Blacken Tilapia over a bed of Garlic Herb Rice & Shrimp Alfredo Sauce
Ingredients
4 lbs of Grouper or Tilapia
1 lb of Jumbo Shrimp (peeled/ deveined)
2 cups of rice
3 cups of chicken stock
4 cloves of minced garlic
1/4 cup of diced onions
1/2 cup of minced herbs parsley, green onions,
tarragon, chives, basil, rosemary, thyme
Olive oil
salt & pepper
Blacken seasoning
Alfredo sauce
3 cups Heavy/ whipping cream
1/2 cup Parm cheese
minced garlic
diced onions
butter
White wine (blanc)
salt & pepper

Directions
Preheat oven 350
Season fish with blkn seasoning. Lightly coat skillet with olive oil on med/high heat sear fish on both sides and place on baking sheet and put in oven for 20 mins or until fish is cooked through
Herbed Rice
In a pan heat up 2 tbsp of olive oil add onions and garlic, saute for 2 mins careful not to burn the garlic. Add rice and roast rice for 2 mins stirring constantly, pour in stock, bring to a boil then turn down to a low simmer cook until rice is tender 15/20 mins (liquid should evaporate) add your choice of herbs, salt and pepper to taste and fluff with a fork
Alfredo Sauce
in a sauce pan on med heat add butter, add shrimp onions and garlic saute for 2 mins, add 1 cup White wine and let it reduce to half. Next add cream bring to a simmer add parm cheese while stirring. Next add roux until sauce thickens.salt & pepper to taste
